Recipe Ingredients For the Cake:
3 tbsp flaxseed ground
100 ml boiling water
300 g whole-grain or spelt flour
70 g cane sugar
0.5 tsp salt
3 tbsp ground cinnamon
1 tbsp cardamom ground
3 tsp baking powder
140 ml olive oil
120 ml plant-based milk (unsweetened)
1 tbsp honey
1 tbsp lemon juice
2 pears, cubed
To Coat the Pear Cubes:
1 tsp ground cinnamon
1 tsp whole-grain flour
To Decorate:
1 pear sliced
5 tbsp flaked almonds
Steps
Preheat your fan oven to 170°C.
Prepare Flax Egg: Add flaxseed and boiling water to a small bowl. Stir and set aside. This will create a flax egg.
Combine Dry Ingredients: In a large bowl, combine whole grain flour, cane sugar, salt, cinnamon, cardamom, and baking powder.
Mix Wet Ingredients: In another bowl, whisk together olive oil, oat milk, honey, and lemon juice. Add the flax egg to this mixture and mix well.
Combine Wet and Dry Mixtures: Slowly pour the oil mixture into the centre of your flour mixture. Mix until no more flour specs remain, but do not overmix.
Coat Pear Cubes: Coat the pear cubes in whole grain flour and cinnamon.
Add Pears to Mixture: Gently stir the coated pear cubes into the batter.
Prepare Cake Tin: Line the bottom of a round cake tin with a layer of baking paper. Brush the sides with a layer of oil.
Pour batter: Pour the batter into the cake tin and smooth out the top using a silicone spatula.
Decorate: Decorate with slices of pear and flaked almonds.
Bake: Bake at 170°C (fan oven setting) for 45 minutes.
